Ezo was a real person. She had to marry with a relative from Syria. She was longing for her homeland Gaziantep. Ezogelin put her longing and feelings into her soups and the soup became so famous. She couldn’t stand this longing and poverty and died at young ages. The soup named after this lady.

It is symbols of the Gaziantep Cuisine. The name Ali Nazik came when the Ottoman padishah Yavuz Sultan Selim visited Gaziantep in the 16th century.  Grilled eggplants are pureed and mixed with the yoghurt and tendered with lamb stew. The padishah likes it so it is very scrumptious.

Nemrud became angry and commanded Abraham to be thrown to fire. All the woods are collected to fire Abraham and having a fire in the city was forbidden. A hunter hunted a gazelle but he wasn’t allowed to cook it. Then his wife came up with a fascinating solution. She took a piece of fat-free meat from gazelle then hit it with stone. She mixed the squeezed meat with the bulgur, paper, and salt. The result is mouth-watering çiğ köfte.

Then, this mixture put on the thin dough and cooked in the stone oven. The bread should be crispy and squeeze lemon to give some aroma. It is so tasty.
